The creation comes from the brand Gooey Lab, led by pastry chef Bruno Santos, who currently runs the Casa de Chocolates de Óbidos. The inspiration came from his family roots — his mother and grandmother were cheesecake bakers (queijadas) in Sintra, a tradition that shaped the development of the recipe. The chocolate bar, filled with fresh goat and sheep cheese, went through a month and a half of testing to ensure both safety and flavor. It remains safe to consume for up to a week and a half after production.
Gooey Lab also offers other varieties, including Dubai-style chocolates made with Iranian pistachio, butter-fried kadaif pastry, white chocolate, and tahini.
Bruno Santos’s passion for pastry began during a school internship and grew through training in Italy and professional experience in Portugal and the United Kingdom. In London, he led catering teams for events organized by clubs such as Manchester United and Liverpool. During the pandemic, he launched his first artisanal sweets brand and, in 2021, returned to Portugal to lead the Casa de Chocolates de Óbidos, creating menus and custom chocolates for festivals and clients.
